Hand-Made Corn Tortilas smothered with guacamole filled crispy pork belly, topped with fresh grilled peach pico, cilantro and lime wedges. Served with rice and rancho beans, and green avocado-tomatillo salsa.
All Natural Free Range Things seared then braised in a light mole verde sauce, made from all Green Ingredients. Tomatillos, Poblanos, Cilantro, Pumpkin Seeds, and Jalapenos. Served over a bed of white rice and tortillas of choice on the side. Garnished with micro cilantro.
Enchiladas de Hongos Silvestres
Vegetarian lover's paradise. A mix of shiitakes, portobellos, criminis sauteed with grilled corn, poblanos, onion and garlic. Rolled up in a Corn toritila with a scoop of ricotta cheese, finished with our signature tarasco sauce, micro greens, rice, black beans and crema drizzle.

fresh seafood mix of Gulf Mexican Prawns, Lobster meat and Rock crab, sauteed with pico de gallo. Assembled Lasagna style with corn tortillas with our yummy poblano cram sauce. Garnished with micro radishes and cilantro from Chinampa farms. Served with rice and Black Beans.
Chile Relleno Tres Quesos
A Roasted poblano filled with Oaxaca Cheese, Chihuhua and Manchego, dipped in egg batter and lightly fried. Served atop a Black Bean Puree, Rice and Roasted Guajillo Sauce. Garnished with Micro greens and a crema drizzle.
